olive oil, 120g quinoa, half a lemon (zest and juice), large handful of chopped parsley, 1 courgette, 1 leek, 1 red pepper, a few chunks of feta crumbled, 1 red chilli (optional)
So, we decided our past posts were starting to look a little cake-heavy… So here is a lovely healthy recipe for you to feast your eyes on! It’s super simple, and super healthy, quinoa is very high in protein and full of great nutrients (and a great replacement for rice or cous cous)
Chop up the chilli and parsley and zest half a lemon. Follow packet instructions to cook quinoa, meanwhile roast the vegetables in the oven until just cooked. When everything is cooked, pile the quinoa and vegetables into a big bowl and mix together with the parsley, lemon zest, chilli (if using), lemon juice and olive oil. Finish with the feta crumbled on top.
