Chocolate Profiteroles

200 ml cold water, 4 tsp caster sugar, 85 g butter (plus extra for greasing), 115 g plain flour, pinch of salt, 3 eggs

I just love when Alice gets this “I am going to bake now!” – look on her face. When this happens you can’t stop her  and as you can see in the first picture, it can get messy. But as I love her baking, I will never stop her, I will just lean back and enjoy the show. Especially when this madness produces these little delicacies.
