350 g plain flour (plus extra for rolling out), 1 tsp bicarbonate of soda, 2 tsp ground ginger, 1 tsp ground cinnamon, 125 g butter, 175 g brown sugar (I used caster sugar…), 1 egg, 4 tbsp golden syrup
I was introduced to Gingerbread in the first week of my stay in Lincoln and loved it ever since. It has a kind of sharpness to it (because of the ginger) but is nice and sweet at the same time, I just adore it. So I decided to give it a try and they turned out just lovely.
